Sushi catering has become one of the most popular choices for events of all kinds, and it is easy to see why. A beautifully arranged sushi spread is visually stunning, endlessly customizable, and appeals to a wide range of dietary preferences. Whether you are hosting a corporate lunch, a wedding reception, or a backyard birthday party, sushi brings a level of elegance and freshness that few other options can match.
At Raw Sushi Bar, we have catered hundreds of events across the Central Valley. This guide shares everything we have learned about planning the perfect sushi catering experience, from choosing your menu to estimating portions to making sure every guest leaves satisfied.
Types of Events We Cater
Sushi works for far more occasions than most people realize. The versatility of Japanese cuisine means it can be scaled up or down, styled formally or casually, and tailored to fit almost any type of gathering.
Corporate Events
Board meetings, client lunches, team celebrations, and office holiday parties. Sushi is easy to eat, creates no mess, and impresses without being over the top.
Weddings and Receptions
From cocktail hour appetizers to full reception spreads, sushi adds sophistication and gives guests something memorable to talk about.
Birthday Parties
Whether it is a milestone birthday or a casual celebration, sushi platters create a centerpiece that doubles as the main course.
Graduations
Celebrate the achievement with a spread that stands out from the usual party trays. Sushi makes any graduation feel like a proper occasion.
We also cater baby showers, retirement parties, fundraisers, and private dinners. If you have a gathering and you want exceptional food, we can make it happen.
Choosing the Right Menu
The key to great sushi catering is building a menu that balances variety with accessibility. Not every guest will be a sushi enthusiast, and the best catering spreads account for different tastes and comfort levels.
Rolls are the foundation. They are familiar, easy to eat, and offer the widest range of flavor profiles. A mix of classic rolls like California and spicy tuna alongside signature specialty rolls gives guests options whether they are adventurous or prefer to stick with what they know.
Sashimi elevates the spread. For events where you want to impress, a sashimi platter adds a premium touch. Slices of fresh salmon, tuna, and yellowtail arranged on a beautiful platter create a visual centerpiece and give sushi lovers something to get excited about.
Combination platters cover all bases. Our combo options include a mix of rolls, nigiri, and sashimi, giving you the best of everything in a single order. This is the most popular choice for events where you want variety without the complexity of ordering each item separately.
"A great catering menu has something for everyone. We always recommend including a few cooked options alongside the raw selections so that every guest finds something they love."
Dietary considerations matter. We offer vegetable rolls for vegetarian guests, and many of our rolls can be adjusted to accommodate common dietary needs. Let us know about any allergies or restrictions when you place your order, and we will work with you to make sure everyone is taken care of.
How Much Sushi Do You Need?
Portion planning is one of the most common questions we get from catering clients, and getting it right is important. Order too little and guests leave hungry. Order too much and you are paying for food that goes to waste. Here are the guidelines we have developed over years of catering experience.
Appetizer Service
8 to 10 pieces per person. This works well when sushi is one of several food options or when it is served during a cocktail hour before a main course.
Main Course
15 to 20 pieces per person. When sushi is the star of the meal, plan for generous portions so guests can sample multiple varieties and go back for seconds.
Mixed Buffet
10 to 12 pieces per person. If sushi is served alongside other main dishes, this amount provides plenty without overwhelming the rest of the spread.
These numbers are averages. Events with younger guests or heavy sushi fans may need more. Events with multiple food stations may need less. When in doubt, we always recommend ordering slightly more than you think you need. Fresh sushi disappears fast at any event.
Popular Catering Platters
Over the years, we have refined our catering offerings to include platters that work for a wide range of event sizes and styles. Here are the options our clients request most often.
Signature Roll Platter. A curated selection of our most popular specialty rolls and classic favorites. This is our most ordered catering item and works for any occasion. Each platter is arranged for visual impact and easy serving.
Sashimi Platter. Premium cuts of fresh fish, beautifully arranged on a serving tray. This is the choice for clients who want to make a statement. The presentation alone draws guests to the table, and the quality of the fish speaks for itself.
Combination Platter. The best of both worlds. A mix of rolls, nigiri, and sashimi that provides variety and visual appeal in a single order. This is ideal for events where you want to offer the full Japanese dining experience without managing multiple separate orders.
"Presentation matters as much as flavor when it comes to catering. We take pride in making every platter look as stunning as it tastes, because we know your event deserves that level of care."
How to Book Catering
Planning sushi catering with Raw Sushi Bar is straightforward. Here is how the process works from your first call to the day of your event.
Start with a phone call. Reach out to either of our locations to discuss your event. Our team will ask about the date, guest count, venue, and any dietary requirements. This conversation helps us recommend the right menu and quantities for your specific needs.
Plan ahead. We recommend placing your catering order one to two weeks before your event. This gives our kitchen time to source the freshest ingredients and prepare everything to our standards. For larger events or peak seasons, earlier is better.
Custom menus are welcome. While our standard platters work beautifully for most events, we are happy to create custom menus for clients with specific visions. Want a particular combination of rolls? A themed presentation? A specific fish that is not on our regular menu? Let us know and we will do our best to accommodate your request.

Tips for a Successful Sushi Catering Experience
After catering hundreds of events, here are the tips we share with every client to make sure the day goes smoothly.
Keep it cool. Sushi should be kept at a proper temperature until serving time. If your event is outdoors or in a warm venue, plan for ice trays or a shaded serving area to keep everything fresh.
Set up a serving station. A dedicated table for the sushi spread allows guests to browse and serve themselves comfortably. Include plates, napkins, soy sauce, wasabi, and pickled ginger within easy reach.
Time the delivery. Sushi is best enjoyed fresh. Coordinate the delivery to arrive close to your planned serving time so guests experience the food at its peak quality.
Label the platters. If your spread includes a variety of rolls, small labels help guests identify what they are choosing, especially those with dietary restrictions or allergies.
With a little planning and the right catering partner, sushi can transform any event into something truly special. Let Raw Sushi Bar handle the food so you can focus on enjoying the occasion.
